The Truth About Tofu

It's Amazing. As I mentioned in my last post - tofu is super healthy for you, and it an also be a great substitute for meat in almost any meal! I know that people are scared of tofu- so here are a few recipes that are so simple that will help you grow to love tofu as much as I do!

One secret when preparing tofu is that it will taste exactly like what you cook it and season it with. So make sure you take the time to season or marinate your tofu to ensure yummy yummy dishes.

Idiot-Proof Tofu Salad

This is one of my favorite recipes of all time. I could eat this any time of day- for a meal or just as a snack. All of the measurements are approximate- so you can make as big or as small of a portion as you would like.

what you'll need:

1/2 package extra-firm tofu
2-3 Tbs. Soy or Real Mayonnaise (I prefer Vegenaise)
2 Tbs. Spicy Mustard
Salt and Pepper
Spike Seasoning (such a great seasoning- a MUST)
optional- chopped celery and chopped red onion

Crumble tofu into bowl. Mix in all ingredients. Serve chilled on toasted wheat bread or on crackers. Enjoy!

Curried Tofu Skewers

what you'll need:

  • 2 cups white wine
  • 1 cup yellow curry paste
  • 2 cups olive oil
  • 1 organic firm tofu, cut into strips
  • 1 red bell pepper, diced into 2-inch pieces
  • 1 red onion, diced into 2-inch pieces
  • 1/2 baby shiitake mushrooms, cleaned, stems discarded
directions:

Mix white wine and curry paste, while mixing slowly add oil to emulsify. Skewer the rest of the ingredients and marinate in curry marinade, let sit 1 hour to overnight.

Grill until all vegetables are cooked.

Tofu Breakfast Burritos

what you'll need:

1/2 yellow onion, diced
1/2 green bell pepper, diced
1 block tofu, drained and pressed
2 tbsp oil or margarine
1 tsp garlic powder
1 tsp onion powder
1/2 tsp dried parsley
1 tbsp soy sauce
2 tbsp nutritional yeast
1/2 tsp turmeric (optional)

directions:

Slice the tofu into approximately one inch cubes. Then, using either your hands or a fork, crumble it slightly.

Saute onion, pepper and crumbled tofu in oil for 3-5 minutes, stirring often. Add remaining ingredients, reduce heat to medium and allow to cook 5-7 more minutes, stirring frequently and adding more oil if needed.

Wrap in a warmed flour tortilla with a bit of salsa for a breakfast burrito or top with soy or dairy cheese. Serves two.
